It was interesting to hear Kate Colquhoun speaking about traditional English Christmas puddings, but I was surprised when she said that the meat in mincemeat fell out of use in the 19th Century.  My English grandmother, who emigrated with her parents to Canada around 1890, always made her Christmas mincemeat WITH meat, as did my mother.  I loved it.  When I moved to England in 1980, I was shocked to discover the emasculated version that the English used in their mince pies and assumed that the recipe must have lost its meat during war rationing.  So perhaps it was much earlier, but the original recipe lived on in the colonies! Now that I'm here in L.A., I continue to make my grandmother's recipe every year at Christmas.  There's also a great recipe for mincemeat cookies, which I hope my mom still has somewhere.  It calls for bacon fat in addition to the already lard-laden mincemeat!  It gives the cookies a lovely smokey flavor which goes well with the macerated fruit. Anyway, here's the mincemeat recipe, exactly as my mom wrote it down (asterisks mine): 1 lb chuck beef, cut up 2 lbs cut up pared tart apples 2 2/3 cups seeded raisins* 2 1/2 cups currants 1/4 lb citron 1/4 lb ground suet 2 teaspoons salt 1 tablespoon nutmeg 2 cups sugar 1 cup strong coffee 1 tablespoon ground cloves 1 tablespoon cinnamon 1 cup meat liquor Cook meat in boiling water to cover until tender; cool in meat liquor. Put meat through food chopper, saving I C liquor. Put next 4 ingredients through food chopper.  Add ground meat, suet and rest of ingredients.  Simmer uncovered 1 hr, stirring often.  Put at once in clean hot jars.  Seal in pressure cooker or put in containers to freeze. * We always used sultanas at home, but here I use golden raisins.
